Ingredients
  

Soup Base
  • 2 lb fresh asparagus trimmed and chopped
  • 2 tbsp unsalted butter
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 medium potato peeled and diced
  • 1 cup heavy cream
Seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice fresh

Method
 

  1. Trim and chop the asparagus into 1-inch pieces.
  2. Sauté onion and garlic in butter until softened.
  3. Add asparagus, potato, broth, and seasonings then simmer until tender.
  4. Blend until smooth and stir in cream and lemon juice.
  5. Warm gently and serve garnished with cream and chives.

Notes

For extra silky texture, strain the soup after blending before adding cream.
