Ingredients
  

Main Soup
  • 500 g asparagus trimmed and chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 750 ml vegetable broth
  • 120 ml heavy cream
  • 1 potato diced
Seasoning
  • salt to taste
  • black pepper to taste
  • 1 tsp lemon juice optional

Method
 

  1. Sauté onion and garlic in butter and olive oil until soft.
  2. Add asparagus and potato, cook briefly, then pour in broth and simmer until tender.
  3. Blend until smooth, stir in cream, season, and serve warm.

Notes

Use fresh asparagus for best flavor and color. Add lemon juice at the end for brightness.
