Ingredients
  

Soup Base
  • 4 cups sweet corn kernels fresh or frozen
  • 2 tbsp butter
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 medium potato peeled and diced
Garnish
  • 2 tbsp chives chopped
  • 1/4 cup cheddar cheese optional

Method
 

  1. Melt butter in a saucepan and cook onion until soft.
  2. Add garlic, corn, potato, broth, and seasonings, then simmer until tender.
  3. Blend until smooth, stir in cream, heat gently, and garnish before serving.

Notes

For deeper flavor, roast the corn before adding it to the soup.
