Ingredients
  

Main Component
  • 2 cups pitted dates soft
  • 1 cup shredded coconut plus extra for coating
  • 1/2 cup almonds or walnuts
  • 1 tbsp cocoa powder optional
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1-2 tbsp water as needed
  • 1 pinch salt
Optional Coating
  • 1/2 cup shredded coconut for rolling

Equipment

Method
 

  1. Soak dates in warm water for 10 minutes if they are dry, then drain.
  2. Blend dates, coconut, nuts, cocoa powder, honey, vanilla, and salt in a food processor until sticky.
  3. Add water gradually if needed to achieve a dough-like texture.
  4. Roll the mixture into small balls using your hands.
  5. Coat each ball in shredded coconut.
  6. Chill in the refrigerator for 15–20 minutes before serving.

Notes

Use Medjool dates for best texture and sweetness. Store in the fridge for freshness.
