Ingredients
  

Brownie Base
  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 4 eggs
  • 1 tbsp vanilla extract
  • 1 cup cocoa powder unsweetened
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 cup semi-sweet chocolate chips
Mint Frosting Layer
  • 3 cups powdered sugar
  • 1/2 cup unsalted butter softened
  • 2 tbsp heavy cream
  • 1 tsp peppermint extract
  • green food coloring optional
Chocolate Ganache Topping
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tbsp butter

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x13 inch baking dish with parchment paper.
  2. Mix melted butter and sugar until smooth, then add eggs one at a time followed by vanilla.
  3. Combine cocoa powder, flour, salt, and baking powder then fold into the wet ingredients.
  4. Stir in chocolate chips and spread batter evenly in the prepared pan.
  5. Bake for 25–30 minutes until a toothpick inserted shows moist crumbs. Cool completely.
  6. Beat butter and powdered sugar together, then add cream and peppermint extract to create mint frosting. Add green coloring if desired.
  7. Spread mint frosting over cooled brownies and chill for 15 minutes.
  8. Heat cream and pour over chocolate chips and butter, stirring until smooth ganache forms.
  9. Spread ganache over the mint layer and refrigerate until set before slicing.

Notes

Chill brownies before cutting for clean layers and use high-quality cocoa powder for the richest flavor.
