Ingredients
  

Cake Batter
  • 6 oz dark chocolate chopped
  • 1/2 cup unsalted butter
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 1 tbsp cocoa powder
  • 1 pinch salt
Optional Garnish
  • powdered sugar
  • fresh berries

Method
 

  1. Preheat oven to 425°F and grease four ramekins with butter, then dust with cocoa powder.
  2. Melt chocolate and butter together until smooth.
  3. Whisk eggs, yolks, and sugar until pale.
  4. Combine chocolate mixture with egg mixture.
  5. Fold in flour, cocoa powder, salt, and vanilla.
  6. Divide batter into ramekins.
  7. Bake for 10 to 12 minutes until edges are firm.
  8. Rest briefly, invert onto plates, and serve warm.

Notes

For the perfect molten center, avoid overbaking and serve immediately after unmolding.
