Ingredients
  

Main Batter
  • 200 g dark chocolate chopped
  • 120 g unsalted butter
  • 2 eggs
  • 2 egg yolks
  • 100 g granulated sugar
  • 1 tsp vanilla extract
  • 40 g all-purpose flour
  • 1 pinch salt
For Ramekins
  • 1 tbsp butter for greasing
  • 1 tbsp cocoa powder for dusting

Method
 

  1. Preheat oven to 220°C (425°F) and prepare ramekins with butter and cocoa powder.
  2. Melt chocolate and butter together until smooth.
  3. Whisk eggs, yolks, and sugar until pale and thick.
  4. Combine chocolate mixture with egg mixture and add vanilla.
  5. Fold in flour and salt gently.
  6. Divide batter into ramekins and bake for 10–12 minutes.
  7. Let rest briefly, then invert and serve immediately.

Notes

Do not overbake to maintain the molten center. Serve immediately for best results.
