Method
- Preheat oven to 200°C and grease ramekins with butter and cocoa powder.
- Melt chocolate and butter together until smooth.
- Whisk eggs, yolks, and sugar until pale and fluffy.
- Combine melted chocolate with egg mixture and add vanilla.
- Fold in flour and salt gently.
- Fill ramekins halfway, add caramel, then top with batter.
- Bake for 10–12 minutes until edges are set.
- Rest briefly, invert onto plates, and serve immediately.
Notes
Do not overbake to maintain the molten center. Serve immediately for best texture.
