Ingredients
  

Main Batter
  • 150 g dark chocolate
  • 100 g unsalted butter
  • 3 eggs
  • 2 egg yolks
  • 100 g granulated sugar
  • 1 tsp vanilla extract
  • 60 g all-purpose flour
  • pinch of salt
Filling
  • 6 caramel candies

Method
 

  1. Preheat oven to 200°C and grease ramekins with butter and cocoa powder.
  2. Melt chocolate and butter together until smooth.
  3. Whisk eggs, yolks, and sugar until pale and fluffy.
  4. Combine melted chocolate with egg mixture and add vanilla.
  5. Fold in flour and salt gently.
  6. Fill ramekins halfway, add caramel, then top with batter.
  7. Bake for 10–12 minutes until edges are set.
  8. Rest briefly, invert onto plates, and serve immediately.

Notes

Do not overbake to maintain the molten center. Serve immediately for best texture.
