Ingredients
  

Main Components
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 2 cups cooked chicken shredded
  • 6 cups chicken broth
  • 1 cup potatoes diced
  • 1 cup green beans chopped
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 bay leaf
  • salt to taste
  • black pepper to taste
  • 1 cup corn
  • 1/2 cup peas
Finishing
  • 2 tbsp parsley chopped
  • 1/2 lemon juiced

Equipment

Method
 

  1. Heat olive oil in a large pot and sauté onion until softened.
  2. Add garlic, carrots, and celery and cook until slightly tender.
  3. Pour in broth, add herbs and potatoes, and simmer until tender.
  4. Add chicken and remaining vegetables and cook until heated through.
  5. Season, garnish with parsley and lemon juice, and serve hot.

Notes

Use homemade broth for deeper flavor and adjust vegetables based on season.
