Ingredients
  

Main Component
  • 500 g chicken bone-in or boneless
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1.5 liters chicken broth
Seasoning
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 1 tsp thyme
  • 1 bay leaf

Method
 

  1. Heat olive oil in a large pot and sauté onions until soft.
  2. Add garlic, carrots, and celery, and cook briefly.
  3. Add chicken and broth, season, and simmer for 45 minutes.
  4. Shred chicken, return to pot, and adjust seasoning.
  5. Serve hot with fresh parsley garnish.

Notes

Use bone-in chicken for richer flavor and add noodles or rice for variation.
