Ingredients
  

Chicken Filling
  • 2 cups cooked shredded chicken
  • 1 small onion diced
  • 1 small bell pepper diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Assembly
  • 4 large flour tortillas
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 2 tablespoons cilantro chopped
  • 2 tablespoons olive oil

Method
 

  1. Combine shredded chicken with all seasonings in a bowl.
  2. Sauté onion and bell pepper in a skillet until softened, then mix with the chicken.
  3. Place cheese, chicken mixture, and cilantro on half of each tortilla, then fold closed.
  4. Cook each quesadilla in a skillet for 2 to 3 minutes per side until golden brown.
  5. Slice into wedges and serve warm with salsa, sour cream, or guacamole.

Notes

For extra flavor, use rotisserie chicken and add jalapeños for a spicy kick.
