Ingredients
  

Chicken
  • 4 halal chicken breasts boneless and skinless
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 tbsp milk
  • 1.5 cups breadcrumbs
  • 0.5 cup parmesan-style cheese grated
  • 0.5 cup olive oil for frying
Topping
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese shredded
  • 0.25 cup parmesan-style cheese extra
  • 6 fresh basil leaves for garnish

Method
 

  1. Preheat the oven to 400°F and grease a baking dish.
  2. Pound the chicken breasts to even thickness.
  3. Coat chicken in flour, egg mixture, and seasoned breadcrumbs.
  4. Pan fry chicken until golden on both sides.
  5. Place chicken in baking dish and top with sauce and cheese.
  6. Bake for 15 to 20 minutes until fully cooked.
  7. Garnish with basil and serve warm.

Notes

For extra crispiness, place the fried chicken on a wire rack for 5 minutes before adding sauce.
