Main Ingredients
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 8 cups chicken broth
  • 2 cups cooked chicken shredded
  • 2 cups egg noodles
Seasoning
  • 1 tsp thyme
  • 1 tsp parsley
  • 1 bay leaf
  • salt to taste
  • black pepper to taste

Method
 

  1. Heat olive oil in a pot and sauté onion and garlic until fragrant.
  2. Add carrots and celery and cook until slightly tender.
  3. Pour in broth, add seasonings, chicken, and noodles, then simmer until noodles are cooked.

Notes

Add lemon juice for brightness and avoid overcooking noodles for best texture.
