Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 medium yellow onion diced
  • 2 carrots sliced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 lb chicken breast
  • 8 cups chicken broth
  • 1 cup orzo pasta
Finishing
  • 2 lemons juiced
  • 1 tbsp lemon zest
  • 2 tbsp fresh dill chopped
  • 2 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil and sauté onion, carrots, and celery until softened.
  2. Add garlic, chicken, broth, and seasonings, then simmer until chicken is cooked.
  3. Shred chicken and return it to the pot.
  4. Add orzo and cook until tender.
  5. Stir in lemon juice, zest, herbs, and serve warm.

Notes

For best flavor, always use freshly squeezed lemon juice instead of bottled.
