Ingredients

  • 400 g spaghetti
  • 150 g halal beef bacon or smoked turkey
  • 3 eggs
  • 1 cup Parmesan cheese grated
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp black pepper
  • salt to taste
Garnish
  • fresh parsley chopped

  • Skillet

Method
 

  1. Cook spaghetti in salted boiling water until al dente. Reserve 1 cup pasta water and drain.
  2. Cook halal beef bacon or turkey in a skillet with olive oil until crispy. Set aside.
  3. Whisk eggs, Parmesan, and black pepper in a bowl.
  4. Sauté garlic in the same skillet until fragrant.
  5. Add hot pasta and cooked meat to the skillet and toss.
  6. Remove from heat and mix in egg mixture quickly to create a creamy sauce.
  7. Add reserved pasta water gradually to adjust consistency.
  8. Serve hot with parsley and extra cheese.

Notes

Always remove the pan from heat before adding eggs to avoid scrambling. Use pasta water for a silky sauce.
