- Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain.
- Season shrimp with Cajun seasoning, paprika, salt and pepper.
- Sear shrimp in olive oil until pink and cooked through, then set aside.
- In the same skillet, melt butter and sauté garlic and onion until fragrant.
- Add bell peppers and cook until slightly tender.
- Pour in chicken broth and simmer briefly, then add heavy cream.
- Stir in parmesan cheese until sauce is smooth and creamy.
- Add cooked pasta and shrimp back into the skillet and toss to combine.
- Adjust consistency with reserved pasta water if needed, garnish with parsley and serve.
Notes
Adjust spice level to taste and use freshly grated parmesan for best results.
