Cajun Shrimp Pasta

Ingredients
  

Pasta & Protein
  • 300 g shrimp peeled and deveined
  • 250 g fettuccine pasta
Sauce Base
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 1 cup chicken broth
Seasoning & Vegetables
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 0.5 tsp chili flakes optional
  • 1 onion finely chopped
  • 1 red bell pepper sliced
  • 2 tbsp fresh parsley chopped

Equipment

  • Large pot
  • Skillet
  • Colander
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain.
  2. Season shrimp with Cajun seasoning, paprika, salt and pepper.
  3. Sear shrimp in olive oil until pink and cooked through, then set aside.
  4. In the same skillet, melt butter and sauté garlic and onion until fragrant.
  5. Add bell peppers and cook until slightly tender.
  6. Pour in chicken broth and simmer briefly, then add heavy cream.
  7. Stir in parmesan cheese until sauce is smooth and creamy.
  8. Add cooked pasta and shrimp back into the skillet and toss to combine.
  9. Adjust consistency with reserved pasta water if needed, garnish with parsley and serve.

Notes

Adjust spice level to taste and use freshly grated parmesan for best results.
