Ingredients
  

Salad Base
  • 2 heads romaine lettuce washed and chopped
  • 1 cup croutons
  • 1/2 cup Parmesan cheese grated
Caesar Dressing
  • 2 cloves garlic minced
  • 2 fillets anchovies chopped
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice fresh
  • 1 egg yolk
  • 1/2 cup olive oil
  • 1/4 cup Parmesan cheese grated

Method
 

  1. Wash and dry romaine lettuce, then chop into bite-sized pieces.
  2. Whisk garlic, anchovies, mustard, Worcestershire sauce, lemon juice, and egg yolk until smooth.
  3. Slowly drizzle in olive oil while whisking to emulsify, then mix in Parmesan cheese.
  4. Toss lettuce with dressing until evenly coated.
  5. Top with croutons and additional Parmesan cheese before serving.

Notes

Use fresh ingredients and emulsify dressing slowly for best results.
