Salad
  • 2 boneless skinless chicken breasts
  • 2 romaine hearts chopped
  • 1 cup croutons
  • 1/2 cup parmesan cheese shaved
Dressing
  • 1/2 cup mayonnaise
  • 2 tbsp grated parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove minced

Method
 

  1. Season the chicken breasts with salt, pepper, and garlic powder.
  2. Cook the chicken in a skillet over medium heat for 5 to 6 minutes per side until cooked through.
  3. Allow the chicken to rest before slicing thinly.
  4. Whisk together all dressing ingredients until smooth.
  5. Toss romaine with dressing, then top with chicken, croutons, and parmesan.
  6. Serve immediately while fresh and crisp.

Notes

For best flavor, chill the lettuce before assembling and add croutons just before serving.
