Ingredients
  

Main Soup
  • 500 g broccoli florets fresh
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tbsp butter or olive oil
  • 750 ml vegetable broth
  • 200 ml cream
  • 1 potato diced
Seasoning & Garnish
  • salt to taste
  • black pepper to taste
  • 0.5 tsp nutmeg optional
  • 50 g grated cheese optional

Equipment

  • Large pot
  • Immersion blender
  • Ladle

Method
 

  1. Prepare and chop all vegetables.
  2. Sauté onion and garlic in butter until soft.
  3. Add broccoli, potato, and broth, then simmer until tender.
  4. Blend until smooth and stir in cream.
  5. Season and serve warm with garnish.

Notes

For a vegan version, replace cream with coconut milk. Add cheese for extra richness.
