  • 4 large eggs
  • 4 slices cheddar cheese
  • 8 slices turkey bacon
  • 1 cup baby spinach
  • 2 tbsp butter
  • 2 tbsp mayonnaise
  • 1 tbsp milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Cook the turkey bacon in a skillet over medium heat until browned and crisp.
  2. Toast the English muffins until golden brown.
  3. Whisk eggs with milk, salt, and pepper, then cook gently until fluffy.
  4. Wilt the spinach briefly in the skillet.
  5. Assemble each sandwich with mayonnaise, turkey bacon, eggs, cheese, and spinach.
  6. Return assembled sandwiches to the skillet briefly to melt the cheese before serving.
