- Whisk together eggs, milk, salt, and pepper in a mixing bowl.
- Sauté onions and bell peppers in a skillet until softened.
- Add egg mixture and cook gently, stirring until softly scrambled.
- Stir in cooked sausage and black beans and heat through.
- Warm tortillas and fill with egg mixture, cheese, avocado, and salsa.
- Fold and roll burritos tightly, then optionally toast in a skillet before serving.
Notes
For meal prep, allow filling to cool before wrapping and freezing. Avoid adding avocado before freezing.
