Main Components
  • 4 large flour tortillas 10-inch
  • 8 large eggs
  • 1/2 cup milk
  • 1 cup cooked breakfast sausage crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onion
  • 1 avocado sliced
  • 1/2 cup salsa

  • jalapeño slices

Method
 

  1. Whisk together eggs, milk, salt, and pepper in a mixing bowl.
  2. Sauté onions and bell peppers in a skillet until softened.
  3. Add egg mixture and cook gently, stirring until softly scrambled.
  4. Stir in cooked sausage and black beans and heat through.
  5. Warm tortillas and fill with egg mixture, cheese, avocado, and salsa.
  6. Fold and roll burritos tightly, then optionally toast in a skillet before serving.

Notes

For meal prep, allow filling to cool before wrapping and freezing. Avoid adding avocado before freezing.
