- Cook the rotini pasta in salted boiling water until al dente. Drain and cool completely.
- Cook the halal beef bacon in a skillet until crispy, then chop into bite-sized pieces.
- Whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, garlic, smoked paprika, black pepper, and salt to make the dressing.
- Combine pasta, tomatoes, red onion, cheddar cheese, green onions, parsley, and most of the beef bacon in a large bowl.
- Pour the dressing over the salad and toss until evenly coated.
- Fold in romaine lettuce and remaining crispy beef bacon just before serving.
- Chill for 30 minutes before serving cold.
Notes
For extra freshness, add the romaine lettuce immediately before serving to keep it crisp.
