Ingredients
  

Pasta Salad
  • 12 oz rotini pasta
  • 8 strips halal beef bacon cooked crispy and chopped
  • 2 cups romaine lettuce chopped
  • 1.5 cups cherry tomatoes halved
  • 0.5 small red onion finely diced
  • 0.5 cup cheddar cheese shredded
  • 2 green onions sliced
  • 2 tablespoons fresh parsley chopped
Creamy Dressing
  • 0.75 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt
  • 1 tablespoon milk optional for thinning

Method
 

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and cool completely.
  2. Cook the halal beef bacon in a skillet until crispy, then chop into bite-sized pieces.
  3. Whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, garlic, smoked paprika, black pepper, and salt to make the dressing.
  4. Combine pasta, tomatoes, red onion, cheddar cheese, green onions, parsley, and most of the beef bacon in a large bowl.
  5. Pour the dressing over the salad and toss until evenly coated.
  6. Fold in romaine lettuce and remaining crispy beef bacon just before serving.
  7. Chill for 30 minutes before serving cold.

Notes

For extra freshness, add the romaine lettuce immediately before serving to keep it crisp.
