Ingredients
  

Salad Base
  • 4 beetroots medium
  • 150 g feta cheese crumbled
  • 1 red onion thinly sliced
Dressing
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar or lemon juice
  • 1 tsp honey optional
  • salt to taste
  • black pepper to taste
Toppings
  • 2 tbsp fresh parsley chopped
  • 2 tbsp walnuts optional

Method
 

  1. Wash, wrap, and roast the beetroots at 200°C for 35–45 minutes until tender.
  2. Cool, peel, and cut the beets into wedges or cubes.
  3. Whisk together olive oil, vinegar, honey, salt, and pepper to make the dressing.
  4. Toss the beetroot and onion with the dressing in a bowl.
  5. Top with feta, herbs, and nuts, then serve.

Notes

Roasting enhances sweetness; add feta just before serving for best texture.
