Beef Stew
  • 2 pounds beef chuck cut into cubes
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 yellow onion diced
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup frozen peas
Dumplings
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 tablespoons butter cold
  • 3/4 cup milk
  • 2 tablespoons fresh parsley chopped

Equipment

Method
 

  1. Coat beef with flour, salt, and pepper.
  2. Brown beef in batches and set aside.
  3. Cook vegetables, add broth and seasonings, then simmer until tender.
  4. Prepare dumpling dough and drop spoonfuls onto stew.
  5. Cover and steam dumplings until fluffy and cooked through.

Notes

For extra fluffy dumplings, avoid overmixing the dough and keep the lid closed during cooking.
