Ingredients
  

Chili Base
  • 1 lb ground beef
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes
  • 1 can crushed tomatoes
  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 cup beef broth
  • 2 tbsp tomato paste
Seasonings
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper optional

Equipment

  • Slow cooker
  • Skillet
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Brown ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. Add diced onion and garlic to the skillet and cook until softened and fragrant.
  3. Transfer beef mixture to slow cooker.
  4. Add tomatoes, beans, broth, tomato paste, and all seasonings.
  5. Stir well to combine.
  6. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  7. Taste and adjust seasoning before serving.
  8. Serve hot with desired toppings.

Notes

This chili tastes even better the next day. Freeze leftovers for future meals.
