Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 2 cups rolled oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Pecan Pie Filling
  • 1 cup chopped pecans
  • 1/4 cup maple syrup
  • 1/4 cup dark brown sugar
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Mix pecan filling ingredients in a bowl and set aside.
  3. Cream butter and sugars until fluffy.
  4. Add eggs and vanilla and beat until combined.
  5. Whisk dry ingredients separately and gradually mix into wet ingredients.
  6. Scoop large dough portions onto baking sheets.
  7. Add pecan topping to the center of each cookie.
  8. Bake for 12 to 15 minutes until edges are golden.
  9. Cool on baking sheets for 10 minutes before transferring to a wire rack.

Notes

Toast pecans beforehand for deeper flavor and chill dough for extra thick bakery-style cookies.
