Main Chicken
  • 6 pieces bone-in chicken thighs or chicken breasts
  • 1/3 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons whole grain mustard
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 lemon cut into wedges

Method
 

  1. Preheat oven to 200°C (400°F) and prepare a greased baking dish.
  2. Whisk together mustard, honey, garlic, oil, vinegar, and spices to make the sauce.
  3. Coat chicken with sauce, bake 35–45 minutes, baste halfway, and broil briefly before serving.

Notes

For best flavor, marinate chicken in sauce up to 24 hours before baking.
