Ingredients
  

Potato Base
  • 2 lb baby potatoes halved if large
  • 8 oz block feta cheese
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tsp sea salt
  • 1/2 tsp black pepper
Finishing Ingredients
  • 1 lemon zested and juiced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh oregano optional
  • 1 pinch red pepper flakes optional

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Arrange potatoes in a baking dish and place feta in the center.
  4. Bake for 35 to 40 minutes until potatoes are golden and feta is softened.
  5. Add lemon zest and juice.
  6. Mix feta into the potatoes until creamy and combined.
  7. Garnish with herbs and serve immediately.

Notes

For the creamiest texture, use high-quality block feta packed in brine.
