Ingredients
  

Main Pasta Dish
  • 12 oz pasta penne or fusilli
  • 8 oz feta cheese block
  • 2 cups cherry tomatoes
  • 4 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black pepper
Garnish
  • 1/4 cup fresh basil chopped
  • 1/4 cup parmesan cheese optional

Equipment

  • Baking dish
  • Wooden spoon
  • Large pot

Method
 

  1. Preheat oven to 400°F (200°C) and place cherry tomatoes in a baking dish with olive oil, garlic, pepper, and chili flakes.
  2. Place the block of feta cheese in the center of the tomatoes and drizzle lightly with olive oil.
  3. Bake for 30 minutes until tomatoes burst and feta softens.
  4. Cook pasta according to package instructions until al dente.
  5. Mash the roasted tomatoes and feta together to form a creamy sauce.
  6. Add the cooked pasta and mix thoroughly. Garnish with basil and parmesan before serving.

Notes

Use block feta for best results. Reserve pasta water to thin the sauce if needed.
