- Preheat oven to 400°F (200°C) and place cherry tomatoes in a baking dish with olive oil, garlic, pepper, and chili flakes.
- Place the block of feta cheese in the center of the tomatoes and drizzle lightly with olive oil.
- Bake for 30 minutes until tomatoes burst and feta softens.
- Cook pasta according to package instructions until al dente.
- Mash the roasted tomatoes and feta together to form a creamy sauce.
- Add the cooked pasta and mix thoroughly. Garnish with basil and parmesan before serving.
Notes
Use block feta for best results. Reserve pasta water to thin the sauce if needed.
