Ingredients
  

Main Filling
  • 4 bell peppers tops removed and seeded
  • 500 g ground beef
  • 1 cup cooked rice
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 1/2 cup diced tomatoes
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/2 tsp cumin
  • salt and pepper to taste
Topping
  • 1 cup shredded cheese cheddar or mozzarella
  • 2 tbsp olive oil
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 180°C (350°F) and prepare bell peppers by cutting tops and removing seeds.
  2. Cook onion and garlic in olive oil, then add ground beef and cook until browned.
  3. Stir in tomato sauce, diced tomatoes, rice, and spices, and simmer for several minutes.
  4. Stuff peppers with the mixture and top with cheese.
  5. Bake covered for 30 minutes, then uncovered for 10–15 minutes until cheese is melted.
  6. Garnish with parsley and serve warm.

Notes

For softer peppers, blanch before stuffing. Substitute rice with cauliflower rice for a low-carb option.
