Ingredients
  

Salad Base
  • 3 ripe avocados peeled, pitted, sliced
  • 2 cups cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 2 tbsp fresh parsley chopped
Dressing
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp red wine vinegar
  • 1 clove garlic minced
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Method
 

  1. Wash and prepare all fresh ingredients. Slice the avocados, halve the cherry tomatoes, and thinly slice the red onion.
  2. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, salt, and black pepper.
  3. Place the avocados, tomatoes, and onion in a large mixing bowl.
  4. Add chopped parsley and drizzle the dressing over the salad.
  5. Gently toss the ingredients together until lightly coated with dressing.
  6. Taste and adjust seasoning if needed.
  7. Serve immediately for the freshest flavor.

Notes

Use ripe but firm avocados to prevent the salad from becoming mushy. Add dressing just before serving for best texture.
