Ingredients
  

Main Salad
  • 1 cup quinoa uncooked
  • 2 cups water
  • 1.5 cups strawberries sliced
  • 2 avocados diced
  • 2 cups spinach
  • 0.25 cup red onion chopped
  • 0.25 cup fresh mint chopped
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Method
 

  1. Rinse quinoa and cook with water until fluffy, then cool completely.
  2. Prepare strawberries, avocado, greens, onion, and herbs.
  3. Whisk dressing ingredients together until smooth.
  4. Combine quinoa with all salad ingredients in a bowl.
  5. Pour dressing over salad and toss gently.
  6. Serve immediately or chill before serving.

Notes

Add avocado just before serving to prevent browning. Adjust sweetness and acidity to taste.
