Ingredients
  

Main Salad
  • 2 avocados diced
  • 2 cups corn kernels fresh preferred
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
Dressing
  • 1 lime juiced
  • 2 tbsp olive oil
  • salt to taste
  • black pepper to taste

Method
 

  1. Prepare the corn by removing kernels from the cob and optionally cooking them lightly.
  2. Dice the avocados and chop the vegetables.
  3. Whisk together lime juice, olive oil, salt, and pepper.
  4. Combine all ingredients in a bowl and toss gently.
  5. Serve immediately or chill briefly before serving.

Notes

Use ripe but firm avocados and add dressing just before serving for best results.
