Ingredients
  

Salad
  • 5 cups baby spinach washed and dried
  • 1 large apple thinly sliced
  • 1/2 cup walnuts toasted
  • 1/4 cup dried cranberries
  • 1/3 cup feta cheese crumbled
Honey Vinaigrette
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • salt to taste
  • black pepper to taste

Method
 

  1. Wash and dry the baby spinach and place it in a large mixing bowl.
  2. Core and thinly slice the apple and add it to the spinach.
  3. Toast walnuts in a skillet over medium heat for 3–4 minutes until fragrant.
  4. In a small bowl whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  5. Add walnuts, dried cranberries, and feta cheese to the salad bowl.
  6. Drizzle dressing over the salad and toss gently until evenly coated.
  7. Serve immediately while fresh and crisp.

Notes

Use crisp apples like Honeycrisp or Fuji for the best flavor. Toasting the walnuts enhances their nutty aroma.
