Ingredients
  

Salad
  • 4 cups mixed greens
  • 2 apples thinly sliced
  • 1/2 cup pecans toasted
  • 1/3 cup dried cranberries
  • 1/2 cup goat cheese crumbled
Dressing
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Method
 

  1. Wash and dry the mixed greens thoroughly.
  2. Slice the apples thinly and toast the pecans in a skillet for 3–5 minutes.
  3. Whisk together dressing ingredients until emulsified.
  4. Combine all salad ingredients in a bowl.
  5. Drizzle dressing over the salad, toss gently, and serve immediately.

Notes

For best results, add dressing just before serving to keep greens crisp.
