Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 eggs large
  • 1.25 cups milk
  • 2 tbsp butter melted
  • 1 tbsp sugar
  • 0.5 tsp vanilla extract
  • 1 pinch salt
Apple Cinnamon Filling
  • 3 apples peeled and sliced
  • 2 tbsp butter
  • 0.25 cup brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 2 tbsp water

Method
 

  1. Whisk together flour, sugar, and salt. Add eggs and milk gradually, mixing until smooth. Stir in melted butter and vanilla.
  2. Heat a non-stick skillet and lightly grease. Pour batter and swirl to coat. Cook each crepe until lightly golden on both sides.
  3. In a skillet, melt butter and cook apples for 3–4 minutes.
  4. Add brown sugar, cinnamon, nutmeg, lemon juice, and water. Cook until apples soften and sauce thickens.
  5. Stir in vanilla extract and remove from heat.
  6. Fill each crepe with apple mixture, fold or roll, and serve warm with toppings.

Notes

Use tart apples like Granny Smith for best flavor balance.
