Method
- Whisk together flour, sugar, and salt. Add eggs and milk gradually, mixing until smooth. Stir in melted butter and vanilla.
- Heat a non-stick skillet and lightly grease. Pour batter and swirl to coat. Cook each crepe until lightly golden on both sides.
- In a skillet, melt butter and cook apples for 3–4 minutes.
- Add brown sugar, cinnamon, nutmeg, lemon juice, and water. Cook until apples soften and sauce thickens.
- Stir in vanilla extract and remove from heat.
- Fill each crepe with apple mixture, fold or roll, and serve warm with toppings.
Notes
Use tart apples like Granny Smith for best flavor balance.
